I have a real weakness for ice cream.  Be it mid-summer or the depths of winter, I have a hard time resisting this frozen treat.  My kids love the stuff as much as I do. Well, this smoothie satisfies those cravings and then some!

The Basics

I started thinking about this smoothie during a long run a few weeks ago.  About five miles in, I began fantasizing about a big bowl of ice cream and began wondering:  can I create a healthier version of the vision in my head?  I thought that perhaps I could recreate a lot of the flavors of a banana split in a healthy smoothie that would satisfy my cravings and charge up my recovery after a long run.

This drink ticks off all the requirements for me.  It’s full of the flavors I like best in a banana split and includes plenty of protein and carbs to help recover post-run.  It’s also filling and satisfying enough to replace a meal.

The first time I made this I knew I had nailed it!  Better yet, I let the kids taste test it and garnered two thumbs up from them.  This is a real accomplishment at my house as I have a couple of pretty picky eaters with insatiable ice cream appetites.

The fixings are below, just blend all until smooth and you’ve got a healthy sundae in a glass!

Ingredients

  •        1 frozen banana
  •        1/2 cup frozen strawberries
  •        2 cups of spinach
  •        1/3 cup of fat-free vanilla greek yogurt
  •        1 to 1 ½ cups fat-free milk
  •        1 Tbl of cocoa
  •        1 Tbl of PB Fit
  •        ¼ cup nuts (pick your favorite here, personally I like pecans)
    • Skip lowering the calorie and fat content.

With Nuts:

Calories:  537     Protein:  24g     Fat:  21.8g     Fiber:  12.7g

Without Nuts:

Calories:  349     Protein:  21.5g     Fat:  2.8g     Fiber:  10.1g

Additives: You can easily sub out or supplement your smoothie with any of the ingredients below to ramp up the flavor or health benefits

  •        ¼ cup frozen pineapple
  •        ¼ cup frozen cherries
  •        1 Tbl. Chia seeds

So skip the sundae and go straight for this healthy treat.  I bet you could even talk the kids into having half of one of these in place of grabbing something from the ice cream truck this summer.
